Once upon a time when I married my husband ten years ago, I wouldn’t touch shrimp with a 10-foot pole. Honestly, I wasn’t eating a whole lot of anything back then. About two years after we got married, we decided to go on our first married adventure and headed to Spain and Italy for two weeks.
In Spain, something happened. We were doing a tapas crawl where I was eating everything fried (hello fried eggplant) and full of sugar; my husband was eating everything else. They were cooking them to order right in the restaurant, and the smell was so incredible I decided to forego my hatred of seafood to try one shrimp.
They were amazing, like life-changing amazing. Seriously. After that one restaurant in Spain, shrimp has been one of my favorite proteins, even better if it’s lathered up in garlic and butter. And tossed with a little pasta in a shrimp scampi.
The shrimp scampi I’m sharing today isn’t my own homemade recipe, it isn’t actually even a recipe. But it tastes and smells as good as if you made it from scratch right on your own stovetop. Michael Angelo’s™ Shrimp Scampi is made with linguine pasta, cooked al dente. Then they add plenty of plump shrimp, a lemon butter sauce, and diced garlic for an all-around delicious meal. It’s like making something on your own from scratch, freezing it, and warming it up later. Oh, except you don’t have to make it.
One of our family’s goals since moving to Texas is to sit down and eat dinner at night rather than eating out. Michael Angelo’s™ family-sized meals like the shrimp scampi are helping us do that.
