Instructions
Preheat oven to 375 degrees and remove puff pastry from refrigerator to thaw.
Cut both mozzarella and ham steak into 1/4 inch cubes.
Pour cheese and ham into large bowl and mix until well combined.
Roll out one sheet on puff pastry on parchment paper.
Using either a bowl, glass, or backside of an empanada cutter, cut 4” circles from the dough.
Continue with all four sheets of puff pastry dough.
Spray empanada cutter with non-stick baking spray.
Mix egg and water together to make an egg wash.
Place one circle of dough into center of empanada cutter and add one large spoonful of ham and cheese mixture to the center.
Using a food brush, brush outside circle of empanada with egg wash.
Fold together and press tightly to seal empanada together. Slowly peel from the empanada maker and place on a baking sheet sprayed with non-stick baking spray.
Brush the top of the empanada with egg wash to help it brown in the oven.
Repeat with remaining circles and filling mixture.
Bake for 12-15 minutes or until top has lightly browned.
