These simple four ingredient caprese salad skewers combine tomatoes, fresh mozzarella, basil, and balsamic in adeliciously fresh appetizer for a party.
Slide a cherry tomato to about an inch from the bottom of the skewer. Slide a basil leaf on top of the tomato followed by a mozzarella ball. Repeat with one more of each.
Once all skewers are complete, sprinkle them with salt and pepper then drizzle with balsamic glaze.
balsamic glaze, salt and peper
Refrigerate until ready to serve.
Balsamic Glaze
Pour 1 cup of balsamic vinegar in small pot and cook over medium heat until it begins to bubble. Reduce heat and simmer until it reduces by about half. Remove from heat and let sauce cool.
1 cup balsamic vinegar
Notes
Make sure to use actual balsamic glaze (aka balsamic reduction) and not just balsamic vinegar so that that glaze will adhere to the skewers better. Regular balsamic vinegar is thinner and tends to just run right off.Store covered in plastic wrap until ready to serve. Return any uneaten skewers to the fridge and rewrap with plastic wrap until ready to enjoy again.Enjoy within three days. These are good for up to three days in the fridge as is but I would recommend enjoying them within that timeframe for the best taste.
