These easy trail mix breakfast cookies are jam packed full of protein and flavor! They're the perfect way to start any day and perfect for both kids or adults! All of the flavors of a delicious trail mix in one healthy protein filled breakfast cookie recipe!
Preheat oven to 350 degrees and line two baking sheets with parchment paper.
Beat the egg, peanut butter, and coconut oil together until smooth.
Add honey, vanilla, cinnamon, salt, and baking powder and continue beating until totally combined.
Add flour, almond flour, collagen peptides and oats. Mix in until just combined.
Use a wooden spoon to add in the dried cranberries, mini M&Ms, and walnuts. Fold until mixed in completely.
Use a large cookie scoop (3 TBS) to place round balls of the cookie dough on the prepared baking sheets. Lightly press down on the cookie balls to flatten slightly. Make sure cookies are at least an inch apart on all sides so they don't run together.
Bake in oven for 10-12 minutes, allowing to cook until edges are slightly golden brown but not dark. They will not be hard when you remove from the oven.
Immediately move from baking sheet very carefully and place on a cooling rack to allow to completely harden.
Notes
Substitute the mini M&Ms with sugar-free mini chocolate chips to remove the added sugar from the recipe.
