Honey roasted carrots get their sweet flavor from a little honey, butter, and seasonings. They’re the perfect veggie to enjoy with your favorite side dish, a holiday feast, or just as a yummy snack any time of the day!
Melt butter on low heat in a small pan either in the oven or on the stovetop.
Remove butter from heat and add rosemary, honey, salt, pepper, and garlic. Mix well.
Toss carrots with butter mixture until all are well coated.
Place carrots in a 9x13 baking pan and roast in the oven at 400 degrees for 20 minutes. Stir with a wooden spoon at 20 minutes then roast for another 20-25 minutes or until soft.
If desired, garnish with pomegranate seeds.
Serve warm as a side dish to your favorite meal.

Roast the carrots on a baking sheet with parchment paper if you don’t have a baking dish available.Sprinkle with fresh parsley or fresh mint instead for a different flavor profile or if you don’t have fresh rosemary.Start checking the carrots after about 35 minutes total. Depending on your oven, they may roast faster or slower than the recipe calls for.To reheat the carrots, put the carrots on a baking sheet with parchment paper. Pop them in a cold oven and preheat to 350 degrees. By the time the oven comes pre-heats, the carrots will be warm and ready to enjoy.Store roasted carrots in the fridge in an airtight container for up to five days.
