This delicious strawberry ice cream cake is simple to make and full of yummy strawberry flavor! Two layers of ice cream, strawberry topping, and a golden Oreo crust make this the perfect summer dessert!
Line the bottom of a 9" springform pan with parchment paper.
Crush 24 Oreo cookies in a food processor, then blend in the melted butter.
30 Golden Oreo cookies, 1/2 cup unsalted butter
Press the Oreo mixture into the bottom of the prepared pan.
Spread the vanilla ice cream over the crust, being careful not to dig into the crust.
1 quart vanilla ice cream
Mash 1/2 of the strawberries and spread them over the layer of ice cream.
1 pint fresh strawberries
Place in freezer for 1 hour.
Remove from freezer and spread the strawberry ice cream over the layer of strawberries then top with a layer of whipped topping.
1 quart strawberry ice cream, 8 ounces cool whip
Place in the freezer for 6-8 hours until it is completely firm.
Remove the cake from the freezer and allow it to thaw for 5-10 minutes before removing it from the pan.
Dice the remaining fresh strawberries and garnish the cake with the strawberries and crushed Oreos before serving.

Store leftovers in an airtight container in the freeze for up to 3 months!Add sprinkles or use a funfetti ice cream instead of vanilla to make this a fun ice cream cake for birthdays!Mix it up with different flavors throughout the year with different flavors of ice cream and even different flavors of Oreos in the crust!You can just make it in a regular round cake pan or even a square pan. If you’re going to do that, make the piece of parchment paper long enough that the edges hang over the edge of the pan. Then once the cake is frozen, gently lift it out of the pan using the edges of the parchment paper. The springform pan option is much easier but this works too if you don’t have one.
