Preheat oven to 350ºF and butter an 9x5 inch bread loaf pan.
Mash the bananas in a large bowl. Then add the butter and mix until combined.
3 very ripe bananas, 6 TBS butter
Add the remaining ingredients and stir to combine.
1 cup sugar, 1 1/2 cups flour, 1/2 tsp baking soda, 1 large egg, 1 tsp vanilla extract, 1 pinch salt
Pour the batter into 9x5-inch loaf pan.
Bake for 55-65 minutes or until a toothpick comes out cleanly then remove from the oven.
Allow to cool in the pan for 5 minutes then carefully use a knife to go around the edges of the loaf pan to help the bread come out.
Carefully move the bread out of the pan and onto a cooling rack and allow to cool completely before slicing and serving.

How to Store: Once the banana bread has completely cooled, place it in a gallon size zipper top bag and store airtight at room temperature. How to Freeze: This bread freezes beautifully. I personally like to slice it and freeze each individual slice on its own. You can either wrap them up with plastic wrap and put in freezer safe baggies or you can just put them directly into baggies.
