This chocolate caramel Twix cheesecake combines a delicious cheesecake filling with a chocolate and caramel topping with chunks of Twix candy bars! It will be a hit with anyone who likes cheesecake, caramel, chocolate, or Twix candy bars!

I’m a big fan of both Twix candy bars and cheesecake so it was a no brainer to combine the two of them into one show-stopping dessert.

A graham cracker crust gets topped with a creamy cheesecake batter then covered with a caramel layer with a chocolate drizzle. And don’t forget the chopped up candy bars on top – those really add texture to the creamy cheesecake.

This cheesecake is full of flavors that everyone will love whether you bring it to your Thanksgiving dinner, a Christmas party, or even to your next summer backyard barbecue. The flavors are universal enough that it works for pretty much any occasion!

It’s also a great way to use up any of that leftover Halloween candy you have sitting around!

Ingredient Notes

  1. Vanilla Wafers – easily swap these out for another vanilla cookie, a shortbread cookie (like I did in my Easter cheesecake) or graham crackers.
  2. Butter – both salted and unsalted work for this.
  3. Cream cheese – I highly recommend using full-fat for this Twix caramel cheesecake. Others will work, but they won’t be nearly as rich. Make sure that you are using room temperature cream cheese so it mixes well with the other ingredients.
  1. Eggs – for best results, have the eggs at room temperature.
  2. Caramel Bits – you can use caramel squares or a store-bought caramel sauce for this as well. You really just needs something that will melt down into a caramel sauce.
  3. Heavy cream – using whole milk will work but it won’t be as rich.
  4. Chocolate chips – I prefer semi-sweet for this but both milk or dark chocolate chips will work as well.

How to make Twix Cheesecake

Making cheesecake is a lot easier than one would think. The most important part is having your ingredients at room temperature when you mix them so everything mixes together into one creamy filling.

Otherwise, it’s as simple as making any cake. Below you’ll find step-by-step instructions and pictures to help you achieve this decadent caramel cheesecake. You can also find printable instructions in the recipe card at the bottom of this post.

1 – Make The Crust

  1. To start the cheesecake, preheat the oven to 325 degrees.
  2. Place the vanilla wafers into a food processor and pulse until the wafers turn into crumbs.
  3. Add the melted butter to the wafer crumbs and pulse again until the crumbs and butter are just combined.
  4. Press the processed crumbs into the bottom of a 9-inch springform pan.

2 – Make The Filling

  1. Combine the cream cheese and sugar in a large bowl using a hand mixer until they are fully blended and smooth.
  2. Add the eggs and beat everything again until the mixture is creamy.
  3. Pour the cream cheese mixture into the crust.

3 – Bake The Cheesecake

  1. Put the cheesecake into the preheated oven and cook for 55 minutes or until the center of the cheesecake just slightly jiggles when tapped.
  2. Once the cheesecake is done baking, remove it from the oven. Take a knife and run it around the edge of the cheesecake then set it aside to allow the cheesecake to cool.
  3. Place the cheesecake in the fridge and chill for at least four hours without removing it from the pan or covering it.

4 – Make The Toppings

  1. For the caramel topping, place the caramel bits and one tablespoon of heavy cream in a microwave-safe bowl. Microwave in 30-second intervals, stirring in between intervals, until the caramel is fully melted and smooth.
  2. For the chocolate ganache, put the one cup of semisweet chocolate chips into a small bowl.
  3. Place the heavy cream on the stove over medium heat until the cream starts to boil. Immediately take the cream off the heat and pour the hot cream over the chocolate chips.
  4. Allow the cream and chocolate chips to sit for a minute then gently stir them together until smooth.

5 – Finish the Twix Cheesecake

  1. Spread caramel in an even layer on the top of the cheesecake. Allow to set for several minutes before adding the chocolate layer.

  1. Spoon the chocolate ganache onto the caramel cheesecake then spread the chocolate all over the cheesecake.

  1. To garnish the cheesecake, chop the mini Twix bars and sprinkle them over the cheesecake. Once garnished, place the cheesecake back into the fridge to chill for another 30 minutes!

  1. Remove from the fridge, slice, and serve immediately while still chilled.

This cheesecake is best served chilled but can be left out for an hour or two without any issues. It just tastes better chilled because the cheesecake will be firm and set.

How to Cut Cheesecake

Run a sharp knife in hot water before using it to slice the cheesecake. This will allow the knife to go through the chilled cheesecake smooth, creating perfect slices!

How to Store Leftover Cheesecake

Store any leftover cheesecake in an airtight container for up to three days in the fridge. If you want to keep the toppings from falling off, you can also wrap it in plastic wrap if you’d like but it’s not necessary.

You can also freeze this cheesecake for up to three months by wrapping tightly in plastic wrap and placing in a freezer safe container then into the freezer. Allow the cheesecake to thaw before eating.

Pull ingredients out of the fridge before baking to allow them to get to room temperature for best results.

Place cream cheese in an oven that is preheated to 180 then turned off to get it to soften quickly. Placing eggs in warm water will do the same.

Cheesecake is known for cracking, if yours cracks don’t worry you can easily cover it up with caramel layers.

Should I put a pan of water in the oven with my cheesecake?

Putting water in the oven with cheesecake is a common baking method for cheesecakes, but for this recipe, it is not needed.

What is the best way to store a cheesecake?

The best way to store a cheesecake is in an airtight container in the fridge. You can wrap it in plastic wrap before putting it in the fridge but definitely store it in the fridge.

Can I make Twix cheesecake without a springform pan?

I highly recommend using a springform pan but if you don’t have one and want to make this Twix cheesecake right now, you can still make this in a regular pie pan or cake pan. Line the bottom of the pan with parchment paper and grease the sides of the pan with a non-stick cooking spray or butter.

Follow the rest of the instructions as directed, just making the cheesecake on the parchment paper instead of directly on the bottom of the pan. Once the cheesecake has chilled, carefully pull the parchment paper up from the pan, bringing the chilled Twix cheesecake along with it.

Twix Cheesecake

This chocolate caramel Twix cheesecake combines a delicious cheesecake filling with a chocolate and caramel topping with chunks of Twix candy bars! It will be a hit with anyone who likes cheesecake, caramel, chocolate, or Twix candy bars!

Ingredients

Cheesecake

  • 1 ½ cups vanilla wafers
  • 5 Tbsp salted butter melted
  • 4 (8oz) packages cream cheese softened
  • 1 cup sugar
  • 4 eggs

Carmel Topping

  • 1 ½ cup caramel baking bits
  • 1 Tbsp heavy cream

Chocolate Ganache

  • 1 Cup semisweet chocolate chips
  • ½ Cup heavy cream

Garnish

  • 4-8 Fun Size Twix candy bars

Instructions

  •  Preheat the oven to 325 degrees.
  • Place the vanilla wafers into a food processor and pulse until the wafers turn into crumbs.

  • Add the melted butter to the wafer crumbs and pulse again until the crumbs and butter are just combined.
    5 Tbsp salted butter
  • Press the processed crumbs into the bottom of a 9 inch springform pan.
  • Combine the cream cheese and sugar in a large bowl using a hand mixer until they are fully blended and smooth.
    4 (8oz) packages cream cheese, 1 cup sugar
  • Add the eggs and beat everything again until the mixture is creamy. Then pour the cream cheese mixture into the crust, smoothing it out with a spatula so it covers the entire crust.

  • Put the cheesecake into the preheated oven and cook for 55 minutes or until the center of the cheesecake just slightly jiggles.
  • Once the cheesecake is done baking, remove it from the oven. Take a knife and run it around the edge of the cheesecake then set it aside to cool.
  • Place the cheesecake in the fridge and chill for four4 hours then remove the springform pan around the outside.
  • Place the caramel bits and one tablespoon of heavy cream in a microwave safe bowl. Microwave in 30 second intervals until the caramel is fully melted and smooth.
    1 1/2 cup caramel baking bits, 1 Tbsp heavy cream
  • Spread the caramel over the chilled cheesecake
  • Put the semisweet chocolate chips into a small bowl. Place the heavy cream on the stove over medium heat until the cream starts to boil. Immediately take the cream off the heat and pour the hot cream over the chocolate chips. Allow the cream and chocolate chips to sit for a minute then gently stir them together until smooth.
    1 Cup semisweet chocolate chips, 1/2 Cup heavy cream
  • Spoon the chocolate ganache onto the caramel cheesecake then spread the chocolate all over the cheesecake.
  • To garnish the cheesecake, chop the mini Twix bars and sprinkle them over the cheesecake.
    4-8 Fun Size Twix candy bars
  • Place the finished cheesecake back into the fridge and chill for about 30 more minutes. After the cheesecake has chilled drizzle any leftover caramel sauce over the top.
