I think it has been established that I am a s’mores lover. If you don’t believe me go check out my s’mores cookies, s’mores brownie pie, or s’mores dip recipes as proof. I am of the mind set that you can never go wrong with anything s’mores, or have too many s’mores things for that matter. With all things s’mores on my mind, I had to create a s’mores bar.

These delicious s’mores bars can be made right at home without the hassle of starting a fire or worrying about fire safety. Instead, these bars enhance the classic s’mores ingredients by pairing them with a few other things like oats, sweetened condensed milk, and melted butter.

These easy s’mores bars are packed full of delicious flavor. With every bite you get marshmallow creme, melted chocolate, and graham cracker crust, plus the added sweetness from the sweetened condensed milk layer.

These scrumptious treats are arguably better than the traditional campfire version.

I know everyone loves eating s’mores as much as I do. That makes these the perfect treat because they work for any occasion, not just the one time you have a campfire.

Imagine how fun it would be to bring these yummy s’mores bars to a themed baby shower, or an outdoor games night with your neighbors.

Why You’ll Love This Recipe

  • Easy to make – with just a few simple steps you can be enjoying toasted marshmallow and chocolate bliss. The hardest part is waiting for the smores bars to cool down so you can eat them.
  • Simple ingredients – you don’t need anything fancy to make these at home. Most of the ingredients you likely have on hand already.
  • Feeds a crowd –  evenly portioned to feed 15 people with each square getting its own melty chocolate piece on top of a large gooey marshmallow.

Ingredient Notes

  • Graham crackers - you can use graham cracker crumbs if you have them on hand instead of graham crackers, you will need roughly 1 3/4 c.
  • Semi-sweet chocolate chips – feel free to use different types of chocolate chips. If you want it sweeter, go for milk chocolate or for a richer taste use dark chocolate. Or try out a combination of chocolate.
  • Hershey’s chocolate bars – you can use any chocolate bar you’d like here. It could also be fun to try something different like Reese’s. They may just taste a bit more like these peanut butter s’mores bars.

How to Make S’mores Bars

These delicious bars are super easy to make. The trickiest part is not burning the mini marshmallows at the end. Otherwise, it’s as simple as layering the ingredients. I’ve included full instructions with step-by-step pictures below to help you out.

1 – Make the Graham Cracker Crust

Preheat your oven to 350°F and line a 9″x13″ glass baking pan with parchment paper. Cooking spray or aluminum foil will work if you don’t have parchment paper.

Crush 15 graham crackers until they turn into a fine crumb. In a large mixing bowl add the sugar to the crushed graham crackers and mix until well combined.

Mix the melted butter into the crumb mixture and stir until you reach the right consistency. Then press the crumb mixture into the bottom of the 9 x 13-inch pan.

2 – Add the S’mores Toppings

Now drizzle the sweetened condensed milk over the crust and gently spread it to an even layer.

Layer half the chocolate chips over the crust, then add the oats, followed by the remaining chocolate chips on top. You basically want to sandwich the oats in chocolate chips. Make sure to spread all the layers throughout the entire pan.

3 – Bake S’mores Bars

Place in the oven and bake for 25 minutes. You’ll add the marshmallows to complete the s’mores in the next step so the marshmallows don’t get burnt!

Remove from the oven, sprinkle a single layer of miniature marshmallows on top of the chocolate, then bake for an additional 4-5 minutes, until the marshmallows are melted and just barely golden brown.

You’ll want to keep a close eye on the marshmallows to ensure they don’t burn, which happens quickly.

Place 15 large marshmallows on top of the melted fluffy marshmallows. I like to spread them out evenly so each of the bars will end up with one large toasted marshmallow on top.

Next, turn the oven to a low broil then place the pan in the oven and broil for about 1 minute or until marshmallows just start to brown. Be sure to keep a close eye on them because they will brown very quickly.

4 – Cool and Finish the S’mores Magic Bars

Remove from the oven and allow to cool for 30 minutes.

Top with crushed graham crackers and chocolate bar pieces then allow to cool an additional 30 minutes.

Use parchment paper to remove from the pan then cut into squares using a sharp knife.

Expert Tips & Storage Info

Store s’mores bars in an airtight container for up to three days at room temperature.

Make sure to allow the bars to cool completely before you try to remove them from the pan and cut. If they’re still warm, they won’t come out cleanly.

You can skip the chocolate bar on top if you want or think it’ll be too much chocolate. It’s not necessary, I just think it looked pretty!

Recipe FAQs

Can I only use large marshmallows?

If you only have large marshmallows on hand, you can use them by cutting them in half and placing in a single layer on top of the chocolate mixture. Using the full marshmallow will result in too thick of a layer and they will not be as melted.

For the large marshmallow on top, I recommend only using large marshmallows. If you try to use mini marshmallows, they’ll just melt into the other mini marshmallows you already have. If you don’t have large marshmallows, just skip that extra marshmallow on top.
