Ingredients in million dollar deviled eggs
Ingredient Notes and Substitutions
- Hard-boiled eggs – you can buy precooked hard-boiled eggs, but the fresher the eggs the easier it will be to get the mixture smooth. This egg timer is my favorite tool for making these!
- Bacon – use freshly cooked bacon, not store-bought bacon bits, or it won’t have the same crunchy texture that makes these so good.
- Pickle – if you aren’t a fan of pickles, you can skip the actual pickle, but don’t skip the sweet pickle juice! It needs the acidity of the teaspoons of the pickle juice to balance out the other flavors.
- Mustard – yes you need both the mustards for this recipe, they bring in two different flavors that work super well together.
- Hot sauce – any brand will work, just make sure it’s not buffalo sauce. Don’t worry about it being spicy, you won’t even taste it!
- Mayo – make sure you’re using full fat mayonnaise and not Miracle Whip or some other fake version or you’ll end up with deviled eggs that aren’t as creamy as you want! This also gives these a good tang!
How to make Deviled Eggs
Time to get crackin’! These million dollar deviled eggs may look and taste fancy, but they’re actually incredibly easy to make! I’ve included step by step instructions below, make sure to check out the recipe card for detailed amounts and instructions!
1 – Prep all the ingredients
First thing first, get those large eggs boiled! I always use my egg timer in a regular pot of water but you can use an Insta pot and ice bath to boil them or buy them pre-boiled. Or use this tutorial on how to make hard boiled eggs in the air fryer!
Once they’re boiled and cooled, peel carefully so you don’t destroy the outside f the eggs.
The same goes for the bacon, cook it however you prefer. I prefer the oven because it’s the easiest, but whatever works! Then try not to eat it all before it’s time to put it on top.
Cut small slices of pickle as well and set aside your pickle juice for later.
2 – Make The Deviled Egg Filling
Add your mayonnaise, hot sauce, mustard, dijon mustard, pickle juice, and sugar in a large bowl then whisk until smooth.
Next, slice the eggs in half, scoring the egg whites, so you can scoop out the yolks. Add the yolks to the mayonnaise mixture and whisk everything together until smooth either using the whisk or a hand mixture if you’d prefer.
Add salt and black pepper to taste and stir into the egg mixture.
3 – Fill the deviled eggs
Scoop that egg yolk mixture into a zipper top bag or piping bag. Cut at least half an inch off the tip or corner of the bag and gently press the bag to fill each shell evenly with the deviled egg filling.
4 – Garnish and Serve Deviled Eggs
Top each egg with a slice of pickle, bacon, and a sprinkle of paprika for garnish. This isn’t necessary, but it really gives these a million dollar deviled eggs look and feeling – plus, the extra crunch and flavor is delicious!
Place on your favorite serving dish (I love this egg platter) and serve chilled.
Expert Tips & Storage Information
Make this the night before by making everything but the toppings, then top the deviled eggs when you’re ready to serve! This is one of my favorite deviled eggs recipes because you can make them ahead of time!
Mash up the leftover mixture to use as an egg sandwich filling.
Store the deviled eggs in the fridge, covered, until ready to serve.
Keeps leftovers for up to three days in an airtight container in the refrigerator.
Recipe FAQs
Why isn’t my filling smooth?
This can be caused by overcooked yolks. To fix that, simply add the filling to a food processor and pulse until smooth.
Do I need to wait for my hard-boiled eggs to cool?
Yes! Make sure the hard-boiled eggs are cooled before adding the filling so it doesn’t get soupy.
How much pickle juice is in deviled eggs?
These million dollar deviled eggs use two teaspoons of pickle juice. If that’s too much for you, you cut it down to one teaspoon, but the acidity of the pickle juice really balances out of the tang of the other ingredients.
What is the best way to store deviled eggs overnight?
If you’re going to make these ahead of time or you have leftovers after serving, you can store them in a deviled egg container like this or just put them into an airtight container and store in the refrigerator overnight. Eat within three days.
