These yummy bacon brie bites combine bacon, brie, and a little sweet maple syrup in one delicious bite. They’re the perfect appetizer when you want something a bit salty and sweet! Great for baby showers, bridal showers, Christmas parties, and more!

I love small bite sized snacks, especially to serve as appetizers. There’s just something about finger foods with all that flavor in one bite that is so special.

Like these spinach artichoke cups, these mini calzones, and even these buffalo chicken rollups. They’re all easy to make and great for giving a group of people a little taste of something yummy without too much.

These bacon brie bites are similar. You get a bit of creamy brie, a bite of salty bacon, and all of it combined with a delicious maple syrup glaze.

They’re perfect for the holidays when brie is popular or really any time of year! I like to serve them at baby showers and bridal showers since they just have that elegant feel to them, even though they’re a cinch to make!

  • Super easy – this recipe starts with a crescent roll base and for the cup portion then gets filled in with bite-size ingredients
  • Sweet and salty – if you want something sweet and salty, these should be on your menu! The bacon + brie + maple syrup is a salty sweet showstopper.
  • Serve at any temp – these taste great at all temperatures – warm, room temp, or even cold. So they’re great for leaving out for hours at a party.
  • Bite-size – bite-size finger foods are great for parties and serving a crowd when you want to give them something to enjoy without serving a full meal

Ingredient Notes

  • Bacon – make sure this is diced into really small pieces, if it’s not diced, it won’t cook properly, and you want cooked bacon.
  • Crescent rolls – you can either do a package of crescent rolls or a crescent roll sheet, just make sure you can cut it into 24 bites
  • Chopped pecans – you want these to be roughly the same size as the diced bacon so if you buy store-bought chopped pecans, I recommend roughly chopping them until they’re a bit smaller
  • Maple syrup – get the real maple syrup, not the fake stuff, since it’s such a huge flavor in these bacon brie bites!

Instructions

Get started by preheating your oven to 350°F and greasing a mini muffin pan.

First, roll out the crescent roll dough into one large rectangle. Make sure you pinch the seams so they are closed, then cut the dough into 24 even pieces by cutting dough into three strips on the short side and five strips on the long side.

If you’re using a crescent roll sheet, you can just cut it straight – no need to press the seams together.

Now place the dough pieces into the muffin tin and press down gently. I like to use a measuring spoon with a flat back to lightly press down the center to really create that cup.

Next cut the brie into pieces to fit into each muffin tin and place a smal piece in each dough cup.

Then mix your bacon and chopped pecans together in a small bowl (this is why you want them roughly the same size). Once they’re mixed, add about 1 teaspoon of the mixture to each cup on top of the brie.

Top each with about 1 teaspoon of maple syrup, trying your best to keep it in the cups rather than all over the side of the muffin tin.

Pop the muffin tin in the oven for 15-20 minutes or until the dough is golden brown and the bacon in nice and crispy.

You can see in the pictures how little my chopped pecans and bacon are – this is important for everything to cook properly! Plus, it means you’ll get a nice mouthful of all the flavors in one bite!

When done, remove each cup from the muffin pan. If the maple syrup caramelizes on the pan a bit, just use a small wooden spoon or spatula to release them without breaking them.

They are best when served warm so the brie in the middle is still gooey, but they still taste great at room temperature or even served cold.

Expert Tips

Use a small wooden spoon or spatula to release the brie bites if the maple syrup runs off and caramelizes into the pan.

Make a vegetarian version of these brie bites by leaving out the bacon altogether. You can either have them as is, just without bacon, or add a sweet jam like raspberry or fig.

Double or triple the recipe easily – just cook one pan in the lower third of the oven and one pan in the top third of the oven. Switch halfway through baking time for even baking.

Reheat in the oven for 5-10 minutes at 350 degrees or until they are warm enough for your liking if you would prefer to not serve them cold. You can just reheat on a baking sheet, no need to put them back in the muffin tin – they will already have their cup shape.

Can you make these ahead of time?

These bacon brie bites can be made up to three days ahead. Keep stored in your refrigerator then just pop them in a 350 degree oven for 5-10 minutes or until they are warm enough to serve.

Can brie bites be frozen?

Yes, you can freeze these. Bake them and let them cool down completely. Freeze them first in individual layers then once they are frozen, you can combine them all into one bag together. Let brie bites thaw before reheating.

Do you take the brie off the rind before baking?

You do not need to take the brie off the rind, you can just cut it into pieces and put them into the brie bites to bake.

How to store brie bites?

Store these in the refrigerator in an airtight container for up to three days. Reheat as explained above.

Ingredients

  • 1 8 oz can crescent roll dough
  • 8 ounces brie
  • ½ cup diced bacon
  • ⅓ cup chopped pecans
  • ⅓ cup real maple syrup

Instructions

  • Preheat oven to 350°F

  • Roll out dough into a large rectangle. Seal seams.

    I took this to a family gathering last night, and there were none left!

    I bought a wedge of Brie, rather than the round, so I was a little skimpy on some of my Brie pieces. To do this again, I would definitely add more cheese.

    I also used diced pancetta in place of the bacon (I was making multiple things to take, and needed a time saver), and it worked out really well. I recommend that as a variation.

    I am looking forward to trying some of the other variations next time!

      I’ve never tried a gluten free version unfortunately, sorry! I’m sure you could something similar if you can find a gluten-free crescent roll dough.
