This strawberry jello pie is a simple pie filled with delicious strawberry flavor that’s perfect for outdoor summer parties or indoor holiday get togethers! It’s a no-bake strawberry pie that’s simple to make and guaranteed to be a group favorite!

Strawberry Pie with Jello

With Thanksgiving just around the corner, I’ve been working on all sorts of no bake pies that you can serve up with the traditional pumpkin pie (or not so traditional pumpkin slab pie).

This strawberry jello pie is one of my personal favorites because of its fresh strawberry flavor combined with the sweet graham cracker crust! Plus, it’s super easy to make and just a nice change from your typical pumpkin and apple pie.

Whether you make this for Thanksgiving, pie day in March, or for a summer backyard BBQ, it’ll be the perfect addition! Serve it straight or topped with homemade whipped cream or Cool Whip on top!

Ingredient Notes

  1. Strawberry Jello – of course, you can use another flavor of Jello, but it won’t be strawberry pie anymore.
  2. Strawberries – these need to be fresh, frozen will release too much liquid and ruin the Jello on top of it.
  3. Graham cracker crust – make your own or use a store-bought one to make it even easier. Either is great!

How to make Strawberry Jello Pie

This strawberry jello pie recipe is really simple to follow and can be made by anyone with little effort. Keep on reading and I’ll tell you everything you need to know to make this delicious strawberrypie.

1 – Make the Jello Mixture

Place sugar, water, jello, and cornstarch into a pot and bring to a boil.

Let boil for one minute then remove from heat and allow mixture to cool. To speed this up, you can pour the mixture into another bowl and place that bowl into another bowl filled with ice water.

2 – Slice and add strawberries

Slice strawberries and add a thick layer into the bottom of the pie crust. 

When I say thick layer, that means you can double up some of the strawberries to make it a thicker layer – but don’t do too many strawberries or the jello won’t be able to cover it all.

3 – Add the filling

Once the filling is completely cooled, pour strawberry filling over the strawberries, making sure to cover all of the strawberries completely.

You can use a spatula to help spread it around after you pour it all out if there are any that are not covered.

Cover with plastic wrap so that it’s completely sealed then stick it in the fridge.

Keep the pie in the fridge for at least four hours, but overnight is best. You want that Jello to set completely.

4 – Garnish and Serve

Top with Cool Whip or homemade whipped cream and garnish with strawberries right before serving so that the Cool Whip.

You could also just put the pie out with the topping choices on the side (but it looks prettier with it on top) so people can choose their options!

Slice the pie into slices using a sharp knife and serve immediately!

Put any leftovers that don’t get eaten in the fridge, covered tightly with plastic wrap until you’re ready to enjoy them later!

Expert Tips & Storage Information

To speed up the cooling process, transfer hot Jello to a new bowl that is floating in a bowl of ice cold water.

Don’t place it in the freezer unless you want frozen Jello. Use the method mentioned above to cool the gelatin mixture!

Garnish with whipped cream for a creamier dessert.

Store covered in the fridge for up to five days or until the crust becomes soggy.

Can I mix the strawberries into the Jello mixture?

Mixing the strawberries can change how the Jello sets up. For the best pie, I recommend a separate layer.

Will the strawberries float to the top?

Nope! The strawberries will stay put and make their own delicious layer.

Can I make this in a regular pie crust?

Yes, just be sure to completely cook your pie crust before adding the layers.

Ingredients

  • 1 pint sliced strawberries
  • 1 cup water
  • 1 cup sugar
  • ¼ cup dry strawberry jello mix
  • 3 TBS cornstarch
  • 1 Pre-made graham cracker pie crust
  • Cool Whip optional garnish

Instructions

  • Place sugar, water, jello, and cornstarch into a pot and bring to a boil.
