Orange Couscous with Veggies and Almonds

  • 1 1/4 cup 100% Florida Orange Juice
  • 1 cup uncooked whole wheat (or regular) couscous
  • 1/2 cup raisins or dried cranberries
  • 3/4 tsp kosher salt
  • 1/2 tsp cumin
  • 1/4 tsp ginger
  • 1/4 tsp cinnamon
  • 1/8 tsp black pepper
  • 1 cup frozen peas and carrots
  • 1/4 cup sliced almonds
  • 1 tsp dried orange zest


  • Combine your orange juice, salt, cumin, ginger, cinnamon, black pepper, and raisins in a pot and bring to a boil.
  • Once liquid is boiling, stir in couscous then immediately cover and remove from heat. Let sit for five minutes covered.
  • While couscous is cooking, steam frozen veggies in microwave or with a steamer.
  • Once couscous is done cooking, remove cover and stir to fluff.
  • Add veggies, sliced almonds, and dried orange zest to couscous and stir together.
  • Serve hot or at room temperature.
