Orange Couscous with Veggies and Almonds
- 1 1/4 cup 100% Florida Orange Juice
- 1 cup uncooked whole wheat (or regular) couscous
- 1/2 cup raisins or dried cranberries
- 3/4 tsp kosher salt
- 1/2 tsp cumin
- 1/4 tsp ginger
- 1/4 tsp cinnamon
- 1/8 tsp black pepper
- 1 cup frozen peas and carrots
- 1/4 cup sliced almonds
- 1 tsp dried orange zest
Combine your orange juice, salt, cumin, ginger, cinnamon, black pepper, and raisins in a pot and bring to a boil.
Once liquid is boiling, stir in couscous then immediately cover and remove from heat. Let sit for five minutes covered.
While couscous is cooking, steam frozen veggies in microwave or with a steamer.
Once couscous is done cooking, remove cover and stir to fluff.
Add veggies, sliced almonds, and dried orange zest to couscous and stir together.
Serve hot or at room temperature.
